Peter's Chile Relleno Casserole
Peter has kindly shared the recipe for his casserole which we enjoyed at our December 2025 potluck!
Ingredients
1/2 stick (4 T) butter
2 cans (27 oz size) whole green chilies, drained
1 lb shredded cheese (Jack, Cheddar, your preference)
8 eggs
2 cups milk
1 cup Bisquick
How to Prepare
1. Melt butter in 13 X 9" pan.
2. Arrange chilies on bottom.
3. Cover with cheese.
4. Blend eggs, milk and Bisquick.
5. Pour over cheese.
6. Bake at 350°F for about 50-60 minutes till egg is firm.
