Persimmon Cookies
Ingredients
1 tsp baking soda
1 cup persimmon pulp (Hachiya or very soft Fuyu)
2 cups all-purpose flour
1/8 tsp salt (1/2 tsp if unsalted butter)
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 egg
1/2 cup butter, softened
3/4 cup white sugar
1 cup walnuts, broken (optional)
1 cup raisins (optional)
How to Prepare
1. Mix baking soda into persimmon pulp; set aside.
2. Mix flour, salt and spices; set aside.
3. Preheat oven to 350 F, grease cookie sheet.
4. Beat butter and sugar until fluffy, beat in egg, then persimmon.
5. Fold in the dry ingredients by hand to avoid overmixing. When mostly combined, add nuts and raisins and finish folding together.
6. Scoop spoonfuls onto greased cookie sheet and bake at 350F for 12-15 minutes, until dark golden and done in center; larger cookies will take longer. Cool on racks before storing.
