Carolyn's Persimmon Cake

Carolyn has kindly shared the recipe for her cake which we enjoyed at our December 2025 potluck!

Ingredients

  • Two mushy persimmons with all the greens removed

  • 1/2 cup (one stick) of soft butter

  • 1/2 cup of sour cream

  • 1 and 1/4 cups of sugar

  • Two eggs

  • 1 teaspoon of baking powder

  • 1 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 2 cups flour

How to Prepare

1. Preheat oven to 350°F
2. Grease pan (Carolyn used a bundt pan) well with butter and dust with granulated sugar (instead of flour)
3. Blend all ingredients but the flour in a blender.
4. Then add the 2 cups flour, mix until combined.
5. Bake at 350°F for about 50-60 minutes or until a toothpick comes out clean.
