Wendy’s Butter Chicken

Ingredients

  • 3 pounds of Costco hand pulled rotisserie chicken or regular cooked chicken breast cut up into bite size pieces

  • 1 medium onion (diced)

  • 2 large cans crushed tomatoes (2 x 28oz size)
    (you can use diced tomatoes, however, the curry sauce will be thinner)

  • 2 tablespoons Garam Masala seasoning

  • 2 tablespoons Tandoori seasoning

  • 2 tablespoons Curry Powder Madras seasoning

  • 1/3 - ½ cup Ginger Garlic Paste

  • 3 tablespoons of cashew or almond butter

  • 1 pint of heavy whipping cream

How to Prepare

  1. Cook onions until translucent. Add canned tomatoes and heat thoroughly. After the tomatoes and onions start to bubble, add all of the spices and heat thoroughly. Add chicken and cashew or almond butter and work in until blended, then cook on low. Prior to serving, add 1 pint of heavy whipping cream, blending well.

  2. Serve over basmati rice or with naan. Garnish with cilantro.

  3. The spices and ginger garlic paste (pictured below) can be found at a specialty grocery store or North Park Market. They are also available on Amazon. If you cannot find cashew butter, then almond butter is a good substitute.
