Mango Cake

Ingredients

Cake:

  • 2 eggs

  • 2 cups flour

  • 1 1/4 cup sugar

  • 1/2 cup melted butter

  • 1/2 cup sour cream or yogurt

  • 1 cup mango pulp

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Frosting:

  • 1 package cream cheese (can use two if needed)

  • 1/4 cup dried mango pulp blended into a flour consistency

  • 1/2 cup powdered sugar

Decoration:

  • Young pea sprouts (harvest while still sweet, not yet bitter-tasting)

  • Pansies

  • Mango slices

How to Prepare

  1. Preheat oven to 350F.

  2. Mix cake ingredients in blender.

  3. Pour batter into springform pan.

  4. Bake at 350 for 45 minutes. Test with a toothpick -- if clean, it is done. If not, add 5-10 minutes and recheck. When done, remove and let cool.

  5. Blend frosting ingredients. Frost cake.

  6. Decorate with young pea sprouts, pansies, and mango slices.
