Mango Cake

Ingredients
Cake:
2 eggs
2 cups flour
1 1/4 cup sugar
1/2 cup melted butter
1/2 cup sour cream or yogurt
1 cup mango pulp
1 1/2 teaspoon baking powder
1/4 teaspoon salt
Frosting:
1 package cream cheese (can use two if needed)
1/4 cup dried mango pulp blended into a flour consistency
1/2 cup powdered sugar
Decoration:
Young pea sprouts (harvest while still sweet, not yet bitter-tasting)
Pansies
Mango slices
How to Prepare
Preheat oven to 350F.
Mix cake ingredients in blender.
Pour batter into springform pan.
Bake at 350 for 45 minutes. Test with a toothpick -- if clean, it is done. If not, add 5-10 minutes and recheck. When done, remove and let cool.
Blend frosting ingredients. Frost cake.
Decorate with young pea sprouts, pansies, and mango slices.
