Avocado Baked Eggs

Ingredients

  • 1 avocado

  • 2 slices cooked bacon crumbled

  • 2 eggs

  • kosher salt & cracked black pepper

  • hot sauce optional

How to Prepare

  • Preheat the oven to 425 degrees F.

  • Cut the avocado in half and scoop out the avocado so the hole matches the size of your eggs. If you don’t do this, the eggs will spill out as they cook and make a total mess. Place each avocado half directly on a cookie sheet, or in a small bowl or ramekin on top of a cookie sheet.

  • Crack an egg into each half of the avocado, sprinkle salt and pepper. Add crumbed bacon to the top and place in the preheated oven for 15 minutes.

  • Add salt and pepper to taste, hot sauce if you’d like, and enjoy!
